Mix (A), egg and milk in a bowl.
When the dough starts to come together, transfer to a lightly floured surface. Mix in butter and knead.
Return the dough to the same bowl. Cover with plastic wrap and let it double in size.
Punch down the dough and knead it into a smooth ball. Cover with a damp dishcloth and let it rest for about 15 minutes.
On a lightly floured surface, roll it out to 0.4in/1cm thickness. Cut into the desired shape, using the donut cutter. Cover with a damp dishcloth and let it rise for about 20 minutes.
Deep fry (5) at 300-320F / 150-160C until golden brown. Dip one side of doughnuts into the soy sauce glaze and let it cool.
