Cut potatoes into bite-sized pieces and put them into the microwave safe dish. Cover and cook in the microwave until tender.
Heat the oil in a pan. Stir-fry chicken until cooked through. Add potatoes and stir-fry until golden brown.
Wipe off excess oil. Add (A) and cook until the sauce thickens.
Serve in a bowl and sprinkle chopped parsley.
