Boil the Somen noodles, cut onions into thin slices, and cut Welsh onion into thin rounds.
Place water and the onion from step 1 in a pot and cook. Add Soup Soy Sauce and bring to a boil, then add mixed eggs.
Place the Somen noodles from step 1 in a bowl. Ladle the soup from step 2 over the noodles and sprinkle the green onions on top.
