Peel pumpkin, scrape out the seeds, cut it into small cubes. Put them in the microwave-safe dish, cover with plastic wrap and cook until tender for about 3 to 5 minutes.
Mash pumpkin until smooth. Add walnuts and (A) and mix. Season with salt and pepper.
Serve in a bowl, flat leaf parsley to garnish (optional).
Spoon mash into a bowl and top with chopped flat-leaf parsley (optional).
