Chirimen sansho is a Japanese condiment consisting of chirimenjako (dried baby sardines) and sansho (Japanese pepper). 

Kamada's chirimen sansho is made with chirimenjako from the Setouchi region and Japan-grown sansho simmered in our Dashi Soy Sauce. The gentle flavor and refreshing pungency works well with rice. Enjoy with freshly cooked rice, ochazuke (tea over rice) or okayu (rice porridge). Use it as a topping for pasta or hiyayakko (cold tofu) and even as a snack! 

Q: What is green sansho pepper (misansho)?
A: Sansho (Zanthoxylum piperitum) is a Japanese deciduous shrub of the citrus family Rutaceae.
It is found throughout Japan from Hokkaido in the north to Yakushima south of Kyushu, as well as in the southern part of the Korean peninsula. Green sansho pepper is harvested from May to June when the pepper is still underripe and is said to have the strongest fragrance and pungency.  
The color of the sansho pepper changes as it ripens, so green sansho pepper can only be harvested before it changes color.
